This week on Feature Fare we have a fantastic summer salsa that pairs perfectly with chicken and seafood dishes. Enjoy Chef Chris Hanson’s recipe for a Mmmmarvelous Mango Salsa.

Mango Salsa
INGEDIENTS:
1 Red Onion
1 Red Pepper
1 Orange Pepper
2 Mangoes (Atulfu Available and on sale at Urban Fare May 4 to 10)
1 Cup Fresh Blueberries
4 Green Onions
1 Bunch Cilantro
1 tblsp sugar ( optional)
¼ cupExtra Virgin Olive Oil
3 tblsp Your favorite Vinegar
How to prepare:
Dice all Veggies and fruit the same size and add sea salt and pepper to taste.
Add chopped cilantro last.
Toss lightly to incorporate all ingredients
Serve with chicken, fish or pork. You can even enjoy it ‘straight’ with tortilla chips.
