Here’s another recipe during the Mangia, Mangia event at Urban Fare (on until October 31st). We love how simple an Italian dish can be and if you’re entertaining this will be sure to be enjoyed by all and will keep you from being in the kitchen all evening! The ingredients:
2 handfuls nice mixed ripe tomatoes
1 small bunch fresh basil , leaves picked
sea salt
freshly ground black pepper
olive oil
1 baguette
parmesan cheese (to taste)
Sprig of basil
balsamic reduction to drizzle
25 grams 18 month Rulianno Proscuitto
The Method:
For the tomato topping: Make sure your tomatoes are ripe. Give them a wash, remove their cores and carefully squeeze out the seeds. Place in a bowl, tear in the basil, season with salt and pepper, then toss with olive oil and vinegar to balance the flavours to your taste. (Recipe adapted from Jaime Oliver)
Cut baguette at an angle about 1/2 inch thick. Brush the baguette slices with olive oil and grill briefly – about 45 seconds per side (grill depending). Just until it starts to brown. Begin to plate your baguette and place prosciutto on plate. Next, place shaved parmesan on the bread and top with your bruschetta mix, garnish with some extra basil. Drizzle with balsamic reduction and serve!
